A journey that encompasses our entire peninsula, from Liguria to Tuscany, from Puglia to Sicily, also crossing the Lazio region.
Apulian olives: Ogliarola, Coratina, Peranzona, moving on to more structured and complex varieties such as the Olivastra, the Itrana from the Gulf of Gaeta, the Taggiasca from western Liguria.
The Story
The chef and his partner, who grew up among the olive groves of Puglia and in the historic family bakery in Biccari, in the province of Foggia, have always cultivated a passion for nature, bread, and, of course, extra virgin olive oil. Hence their desire to train and graduate as olive oil sommeliers, offering Evo Hosteria's customers a tasting program featuring 100% Italian extra virgin olive oils paired with artisanal bread and focaccia.
We only offer oils from small Apulian producers like BioRicci, in Foggia, or the Checchia oil mill in Biccari. These producers provide niche, top-quality products, which we also use in our dishes, both for cooking and as a condiment.
